Honestly, is there anything chickpeas can’t do? We’ll be using chickpeas for the base of this delicious sandwich. No we’re not talking about hummus here.
Chickpeas are so wonderful. They’re hearty and creamy. Loaded with protein and fiber. The flavor is mellow and it can be used for an entree or dessert.
Chickpea Salad Filling
For this recipe we used Follow Your Heart veganaise. We also used dijon, liquid smoke, liquid aminos, lemon juice, paprika, garlic powder, nutritional yeast black pepper and dill. Spices are so important. It may sound like a lot for a sandwich but it makes such a big flavor difference.
Mixed with the chickpeas the spices really give a flavorful pop and the mayo really creates a delicious consistency. To be honest, this filing is actually better the second day. This way the flavors have more time to marinate and become “acquainted.”
For this recipe we use cucumber, pea tendrils and tomatoes on the sandwich. This is what we decided to use because well we’re still in quarantine and this is what we had left in the house. Having been able to go to the store we probably would have gone for the classic tomato and lettuce combo but sometimes situations make you try new things.
Also we had pea tendrils in the garden and decided to use them! Highly recommend tomato and cucumber but feel free to modify! Some ideas would include sprouts or even shaved carrots.
