You will love how easy these vegan no bake cookies are to make! If you love the classic combo of chocolate and peanut butter, these cookies are for you. Above all, these cookies will give you the satisfaction of eating a Reese’s peanut butter cup, but in a way healthier fashion.

These cookies are a family favorite, and are ready in under 30 minutes. No need for an oven here. These cookies will be done straight on the stovetop! Let’s no-bake!

Healthy Ingredients for No Bake Cookies

This recipe is so simple, yet much healthier than most traditional cookies. This recipe involves no knives, heavy equipment, or technical work. Regular cookies, baked from scratch, can be tough to perfect. Dealing with exact amounts, precise mixing instructions, exact baking temperatures and times, can be a lot to handle. But this recipe was made to bypass all of those details, while producing a tasty and healthy cookie.

To make these cookies we used chia, maple, peanut butter, coconut oil, cacao powder, soy milk, and rolled oats. The oats are definitely the star of this recipe.

Substitutions

We love cooking, but do our best to make recipes as healthy as possible. We wanted to make a cookie that was flour free, gluten free and pretty straightforward to make. We’ve made this recipe numerous times, always so yummy. We’ve also experimented with different nut butters to see how the cookie would turn out.

I know what you’re thinking, almond butter sounds like the perfect substitute for peanut butter. I mean just the name, chocolate almond butter and chia cookies… sounds amazing. Well here’s what we found out, peanut butter has typically more natural oils in comparison to almond butter.

When we substituted out the peanut butter for almond butter the cookies were definitely delicious but definitely not as moist as the peanut butter cookies. This also could have just been the specific brand of almond butter we used.

Also another great nut butter to try instead of peanut butter, is sunflower seed butter (also known as sunbutter). It’s unbelievably creamy, and really similar to peanut butter. In comparison to almond butter, sunflower butter has a more oily consistency.

To have moist cookies, oil in this recipe is key since there’s no added butter. This makes it the perfect substitute for peanut butter. Hmm Chocolate chia Sunbutter cookies have got a pretty nice ring to it as well. Sounds like a great energizing cookie for a morning snack.

Fun Vegan Cookies

It’s always so fun making cookies, it really doesn’t matter what kind of cookie you’re making. I’ve gotta say though, these are definitely my favorite cookies to shape. It’s no secret that we all love to “taste test” cookie dough. Luckily this recipe contains no animal products, so no egg, aka no risk of salmonella.

Also, no cholesterol or animal cruelty, woohoo! You are not likely to get poisoned from any of these ingredients, unless you did not wash your hands before cooking and well…. that is another tangent. So wash your hands and lettuce show you how to make these cookies!

Pro Tip

To shape these cookies we used a cookie scooper. If you don’t have one feel free to use your hands. After years of working in the restaurant industry, it’s only second nature for us to produce aesthetically pleasing food. Cookie scoopers ensure each cookie is about the same weight and size. We like to keep our cooking tools clean and our cookies uniform. Even if we are making them at home and going to devour them right away.

After using the cookie scooper to make small cookie balls, use your hands to form the cookies. This recipe from start to finish is definitely kid friendly. Between you and me, this is probably going to be the best part: Using your hands and fingers begin to form the cookies. We personally made circular traditional cookies but making cookie bars would definitely be an option too. Make fun shapes with the kids, for a cute and creative learning project.

After the cookies are formed it’s time to pop them in the freezer. To be fully honest with you, the waiting and the patience needed to let those Chocolate peanut butter chia cookies firm up, is the hardest part of this recipe.

While the cookies are going through their transformation in the freezer this is the best time to clean up your kitchen. Yup, I said it. Clean up time! Although it’s not always the fun part of the project, remember that cleaning is also part of your mise en place. Everything must go to its proper place.
Because eating cookies in a clean kitchen also feels better.

Your delicious cookies will probably be ready by the time the cleaning is over. Not a bad reward, huh?

Chocolate, chia, peanut butter, no bake cookies.

Ingredients

  • 2 Cups Old Fashioned Oats

  • 2 Tbsp Chia Seeds

  • 1/4 tsp Himalayan Pink Salt

  • 1/3 Cup Maple Syrup

  • 1/4 Cup Soy Milk (Sub any plant milk)

  • 1/4 Cup Coconut Oil

  • 2 Tbsp Unsweetened Cacao Powder

  • 2 Tbsp Vegan Chocolate (optional)

  • 1/2 Cup Peanut Butter

Directions

  • Start by mixing the oats, chia and salt into a bowl, and set aside.
  • Next, take the soy milk, maple, coconut oil, peanut butter, cacao powder, vegan chocolate and add them to a medium pot over medium-high heat. It’s VERY IMPORTANT to make sure all ingredients are mixed evenly. Nobody likes clumpy cookies!
  • Within a couple of minutes, the mixture will begin to bubble just a bit. After that, your kitchen will smell like chocolate and peanut-buttery goodness!
  • Remove from the heat and pour the oats, chia and salt into the delicious chocolatey sauce. Mix evenly until the sauce is coating all of the oats.
  • Finally, once the mixture has cooled enough to handle, begin scooping out balls of the cookie mixture onto a sheet tray with parchment paper. We used a rounded tablespoon to measure each cookie. You may also want to use an ice cream or cookie scooper if you have one.
  • Press the cookies from the top to flatten them, and shape into rounded cookie form!
  • Pop them in the freezer for about 20 minutes. Enjoy!

Notes

  • The size of the scoop will determine how many portions you will be able to make from the recipe. Use your hands to make the cookies into a nice rounded shape. If you want to make them rustic that is ok too! Just smash them down and go! We like to be a bit fancy and make them nice and round. Either way, they’ll still taste great.
  • Best to store in the refrigerator or freezer. Allow them to thaw for 3-5 minutes before devouring if stored in the freezer.
