Flour-Free Edible Cookie Dough

If you like eating raw cookie dough, this recipe is for you! This Flour Free Vegan Cookie Dough is only 6 ingredients, and made with a unique ingredient you probably already have in your pantry. This recipe is free from dairy, refined sugar, gluten and oil. Amazing right!

This is way healthier than original cookie dough. So what’s the secret? Chickpeas. These versatile beans make quite the exceptional dessert. And this isn’t the only way to use beans as a dessert. Who would have thought eating edible cookie dough could potentially be an easy, healthy snack?

Pro Tips

Since dates are our sweetener of choice it’s best to soak them in warm water for at least an hour before use. The reason for doing this is to get the dates soft so they blend easier and avoid date chunks in the cookie dough. Also, if you don’t have store bought oat flour handy, here’s an easy way to make oat flour at home.

Forming Dough Balls

This treat can be eaten straight out of a bowl or as cookie dough balls. If you’re looking to make cookie dough balls it’s best to let the cookie dough chill in the fridge for 15 minutes.

Once the cookie dough is chilled use a cookie scooper to make uniform dough balls. Once all dough has been scooped into balls they’re ready to eat right away or to be stored in the fridge.

Substitutions

  • Beans: Instead of using chickpeas white beans can be used. White beans have a soft consistency that is similar to blended
  • Nut Butter: Even though we used peanut butter for this recipe nut butters like cashew butter, sunflower seed butter, or coconut butter could be used as a substitute.
  • Flour: Coconut flour would work well as a substitute for oat flour.
  • Sweeteners: If you’re trying to stay away from refined sugar, maple syrup is an alternative.

Although this is a healthier edible cookie dough vegan recipe, please be mindful of portion and serving size. Portion size is always important, even with plant-based foods.

Gluten and flour free edible cookie dough, with chocolate chips and vegan sprinkles.

Ingredients

  • 1 1/2 Cups Chickpeas, canned

  • 1/4 Cup Peanut butter, creamy

  • 3/4 Cup Dates, pre soaked in warm water

  • 2 Tbsp Oat flour

  • 1 tsp Vanilla extract

  • 3 Tbsp Chocolate chips or Cacao Nibs

  • 1 tt Vegan sprinkles (Optional)

Directions

  • First, pour warm water into a bowl and place the pitted dates into the bowl to soak. Soak until soft.
  • Next drain and rinse the canned chickpeas.
  • Then directly place the chickpeas, peanut butter, dates, oat flour and vanilla extract into a high speed blender or food processor.
  • Blend until smooth. If liquid is needed, add some of the water the dates were soaking in.
  • Once smooth, place in a clean bowl and mix the chocolate chips or cacao nibs into the chickpea cookie dough.
  • Place the cookie dough in the fridge for 15 minutes until cool.
  • Serve and enjoy!
