Nate learned this technique while working at Geoffrey Zakarian’s restaurant in Beverly Hills. Geoffrey Zakarian is an Iron chef and a judge on the food network show Chopped. Nate was the Sous Chef working under Chef Wilfred Hoquet at the restaurant, Georgie, in the Montage hotel in Beverly Hills.

There was a dish on the menu that included rosemary infused potatoes that were boiled using the whole herbs in the pot. The potatoes were then breaded in charcoal panko bread crumbs. This method was used to give depth of flavor to the potatoes instead of lathering it with salt and butter.

Fluffy Vegan Mashed Potatoes Infused with Rosemary and Roasted Garlic

Ingredients

  • 5 Cloves 5 Cloves Garlic

  • 4 Each Medium Washed Gold Potatoes (Or 6 small Gold Potatoes)

  • 2 Sprigs Fresh Rosemary

  • 2 Tbsp Plant-based Butter

  • 2 Tbsp Unsweetened Almond Milk (Unsweetened Soy milk works well too!)

  • 1 tt Himalayan Pink Salt

  • 1 tt Black Pepper

Directions

  • Preheat the oven to 375 degrees.
  • Using a sharp knife, top off the very top of the garlic bulb.
  • Take the garlic bulb and drizzle a light amount of olive oil over the cloves.
  • Using aluminum foil, completely wrap the garlic bulb and bake in the oven for 45 minutes at 375.
  • Next, in a large pot of water place the rosemary springs and potatoes. Be sure to salt the water as well. This is called u0022seasoned wateru0022 similar to when pasta water is seasoned with salt. Filling the water level about one inch above the potatoes before they boil, will shorten the time it takes to water to boil. There is nothing more frustrating than putting a giant pot of water on the stove and waiting 30 minutes for it to boil!
  • Boil potatoes until tender. The cooking time will vary depending on how hot the water is when you put it in, and the size of the potatoes. Look for the tenderness and softness of the potatoes to determine when they have finished cooking. An easy way to do this is by sliding a fork into the potatoes. If the potato feels soft and provides no resistance to the fork, the potatoes are ready!
  • Using a colander, strain the rosemary and potatoes.
  • Separate the potatoes and set aside into a large pot. The rosemary can be discarded.
  • Add 5 cloves of the roasted garlic, plant-based butter, and nut milk along with the potatoes.
  • Mash the potatoes until creamy and fluffy.
  • Serve hot and season to taste with salt and pepper!
